Hawaiian Pork Roast

1- 3 to 4 lb boneless pork roast
1/2 cup soy sauce
1/2 cup dry sherry
2 tsp. minced garlic
1 Tblsp. dry mustard
1 tsp. ground ginger
1 tsp. dried thyme
*crushed pineapple sauce
1 can crushed pineapple
3 Tblsp. brown sugar
1 Tblsp. cornstarch
1 1/2 Tblsp. apple cider vinegar
2 tsp. soy sauce

Place pork roast in a zip lock bag or in a bowl – Mix together soy sauce, dry sherry, , minced garlic, dry mustard, ginger and thyme and pour over roast – Place in fridge and marinate 2 to 3 hours or even overnight. Place roast in Crock Pot and cook on high 3 to 4 hours or on low 6 to 8. * Pineapple sauce- drain pineapple and reserve syrup- add enough water to syrup to make 1 cup – in a small sauce , mix syrup with brown sugar, and cornstarch , vinegar, and soy sauce. cook till sauce is thickened then stir in crushed pineapple. Spoon sauce over roast and hot white rice. ALOHA
