Dude’s Root Beer Pot Roast

(cook in oval 5 quart Crock Pot)

  • 1- 2-3 pound rump or chuck roast
  • 1 large sweet onion, cut into large chunks
  • 4 potatoes, quartered
  • 6 carrots, cut into 2 inch chunks
  • 2- celery ribs, diced
  • 1 tablespoon minced garlic
  • 1 liter root beer
  • Salt
  • Pepper

 

Preparation:

1-      Cut up veggies & put in crock pot. Leave a slight depression in center for roast.

2-      Cover roast with salt, pepper & garlic.

Brown roast in a pan on all sides. Add to crock pot. Pour root beer over roast.

3-      Cook on low for 8-10 hours. About 4-5 hours in, flip the roast so the top side gets in the juice.
